Regardless of whether you are a beginner or already speak Mandarin, your vocabulary is key. By focusing on words instead of grammar, research shows you can learn much faster.
And since 90% of learning a language is building a vocabulary, Edward Chinese is built around the 9 000 most common words in a language. But did you know that you only need to know 1 500 words to understand 75% of what you read? The words you need to know are up to you and your needs.
Learning a language is based on two things; grammar, which is word composition, and phonetics, how you pronounce a word. But first and foremost it is about building a vocabulary. Therefore, Edward Chinese focuses on teaching you the basic meanings of words.

Should I learn cantonese or mandarin in preparation for Foshan, China?
I suggest that you learn Mandarin. Most, if not all, will be able to understand Mandarin. It's also more useful world wide and may come in handy some day. It's also a lot easier to learn.
Cantonese is mainly used in the southern part of China and Hong Kong. It's also MUCH MUCH MORE difficult to learn that Mandarin. Cantonese also contain a lot of slang so it's never consistent with the written language. Mandarin is straight forward. I'm a Cantonese speaker and I can tell you that there's something new in the Cantonese language every day.
I think you should learn Mandarin, because although they primarily speak Cantonese, most would be able to understand Mandarin which is much more worthwhile to learn, as it is the official national language of China and is much more widely spoken than Cantonese. Also Cantonese is a very difficult language to learn, as conversational vocabulary is different from written, and everything is really quite complicated.
Learn Mandarin, it's the official language of mainland China and every person who goes to school learns this dialect. In the long run, Mandarin is much more useful for you because you can communicate with almost every Chinese person except the very old. Cantonese is only a regional dialect.
